More often than not, employers that are not good to work for will start to test the boundaries of employees before they even officially hand them a job offer. They want to make sure that they are the kind of person that will accept this behavior from them for as long as possible, so they can avoid having to go through the hiring process for a while.
As an applicant, sussing out the way that a company may treat you as an employee is just as important as presenting yourself in a way that will make them want to hire you. Arguably, it is even more essential if you care about your professional wellbeing. If you see something you don't like, it is better to react to it sooner rather than later.
